Tomato Liquid MSG


Got a glut of tomatoes? Don’t let all that delicious flavour go to waste! This simple freezing and thawing method extracts a beautifully savoury tomato liquid that can be used like a natural umami flavour booster in dressings, soups, sauces and more! Here we used it in a simple vinaigrette to enhance the flavour.

Ingredients
 

For the Tomato Liquid MSG

  • 8 large heirloom tomatoes or approx 500g of seasonal tomatoes

For the Salad Dressing

  • 3 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • 2 –3 tbsp tomato liquid MSG
  • 1 tbsp agave syrup
  • 1 tsp Dijon mustard

Instructions
 

Make the Tomato Liquid MSG

  • Cut the tomatoes into large chunks and place in a freezer-safe container.
  • Freeze for 3–4 hours, or until completely frozen.
  • Remove from the freezer and place the frozen tomatoes in a colander set over a bowl.
  • Leave to thaw for 4–6 hours, ideally in the fridge, allowing all the tomato liquid to drip into the bowl.
  • Pour the collected liquid into a clean jar and store in the fridge.
  • Use a few spoonfuls wherever you want to add an extra hit of savoury tomato flavour.
  • To reduce wastage you can dehydrate the remaining tomato skins and blend up for a lovely sun dried tomato powder

Make the Salad Dressing

  • Add all the ingredients to a jar, seal and shake well until combined. Taste and adjust the seasoning to your liking, then drizzle over your favourite salad.
