Courgettes – Versatile, Vibrant & Farm-Fresh

Courgettes (aka zucchini) are one of summer’s most generous veg – mild, tender, and incredibly easy to use.

Why we love them:

  • Grown right here on our regenerative farm in Kilcoole
  • Super fresh = better taste and higher nutrient content
  • Mild flavour makes them a great base for both savoury & sweet dishes

How to cook courgettes:

  • Raw – grate into salads or spiralise into noodles
  • Sautéed – fry with garlic, herbs & olive oil
  • Grilled – slice lengthways and char for max flavour
  • Baked – great in breads, muffins or fritters
  • Stuffed – roast with a savoury filling for a hearty main

Courgette Fun Facts!

  • Technically a fruit! Courgettes grow from a flower and contain seeds, just like tomatoes and cucumbers.
  • Low-calorie & hydrating – they’re over 90% water but still rich in fibre, potassium, and vitamin C.
  • Bigger isn’t always better – smaller courgettes tend to be sweeter and more tender.
  • Their flowers are edible too! Courgette blossoms can be stuffed and fried for a real treat.
  • Also known as zucchini – ‘courgette’ is the French name, while ‘zucchini’ is Italian.
  • Grows like mad! A single plant can produce 10–20 courgettes in a season.
  • They’ve been to space! NASA has grown courgettes aboard the International Space Station. 🚀
